- 2016 Prophetess Fortified Chambourcin
375mL 18% ALC/VOL Late-picked and selected bunches from our premier Chambourcin vineyard, crushed and fermented on skins for 4 days prior to fortifying and ageing in 100% new French oak for 9 months. Rich, dark red colour vintage port style with old world Christmas aromas of spice and soaked raisins, currents and figs. The palate is long and rich with forest fruits and cigar box notes with a clean finish.
- 2018 Benjamin – The Miller’s Blend
750mL 12.4% ALC/VOL The Miller’s Blend is a tribute to Denis Benjamin Kirwan who was granted land in 1821 and established a Mill on the property in 1825. A limited release of an old method of co-fermenting grapes – 56% Chambourcin, 21% Shiraz & 23% Viognier still practiced predominantly in Tuscany and Northern Rhone. The Miller’s Blend has standout complexities of floral aromas, goosberry, mulberry, spiced plums and cedar. The palate is long with well-rounded tannins and balanced acidity. The ‘locked-in’ characteristic of these grape varieties promotes long mouth feel that finishes with hints of lime, pepper and dark chocolate.
- 2021 Alison – the Noble One
A wistful spirit that flashed gracefully at Jubilee Vineyard Estate and one who modestly enjoyed an equally gracefully red blend. This in dedication, is a handpicked Shiraz, Merlot, and Cabernet Sauvignon, fermented in small open fermenters with some whole bunches using wild yeast, hand plunged four times a day. The free-run juice and pressings were barrelled separately and matured in tightly-grained French oak puncheons for 12 months. The blend has complex aromatics of chocolate, cassis, mulberry, molasses, sarsaparilla, and allspice, following through to an elegant palate with velvety, chalky tannins. Preservative added (220).
- 2021 Cabernet Sauvignon
750mL 13% ALC/VOL Handpicked and fermented in small open fermenters with some whole bunches using wild yeast. Hand plunged four times a day. The free-run juice and pressings were barrelled separately and matured in tightly-grained French oak puncheons for 12 months. Aromatic cassis, cedar, mint, and hints of spice dominate this elegant wine. The palate is well structured with hints of cedar, mint, and lingering French oak spices with fine tannins.

750mL 12.5% ALC/VOL The fruit was sourced and handpicked from a single vineyard in the Orange region of NSW. The wine reveals fresh tropical fruit characters, aromatic passionfruit, and gooseberries with herbaceous notes following through to a zesty palate. Preservative added (220).

- 2021 White Chambourcin (Rose)
750mL 12% ALC/VOL Limited release of this teinturier grape variety characterised by a reddish pigmented pulp, handpicked selected bunches, free-flowing juice collected to produce the soft pink rose colour. Clean, fresh, fruity aromas of cherry, strawberry, and raspberries with a long palate of lingering fruit.
- 2022 Pinot Gris
750mL 13% ALC/VOL Hand selected bunches from Orange and the Central Ranges. This wine has characteristics of aromatic pear and stone fruits with subtle hints of apple blossoms. The palate is crisp, fresh and vibrant. Preservative added (220).
- 2022 Riesling
750mL 12% ALC/VOL Hand-selected bunches from a single vineyard. The wine has floral characteristics with notes of lemon, lime and mandarin. The palate is crisp with fresh citrus and mineral notes. Preservative added (220).
