Handpicked and fermented in small open fermenters with some whole bunches using wild yeast. Hand plunged four times a day. The free-run juice and pressings were barrelled separately and matured in tightly-grained French oak puncheons for 12 months.
Aromatic cassis, cedar, mint, and hints of spice dominate this elegant wine. The palate is well structured with hints of cedar, mint, and lingering French oak spices with fine tannins.
