A wistful spirit that flashed gracefully at Jubilee Vineyard Estate and one who modestly enjoyed an equally gracefully red blend. This in dedication, is a handpicked Shiraz, Merlot, and Cabernet Sauvignon, fermented in small open fermenters with some whole bunches using wild yeast, hand plunged four times a day. The free-run juice and pressings were barrelled separately and matured in tightly-grained French oak puncheons for 12 months.
The blend has complex aromatics of chocolate, cassis, mulberry, molasses, sarsaparilla, and allspice, following through to an elegant palate with velvety, chalky tannins. Preservative added (220).
