This in dedication, is a handpicked Shiraz, Merlot, and Cabernet Sauvignon, fermented in small open fermenters with some whole bunches using wild yeast, hand plunged four times a day. The free-run juice and pressings were barrelled separately and matured in tightly-grained French oak puncheons for 12 months.<\/p>\n\n\n\n<p>The blend has complex aromatics of chocolate, cassis, mulberry, molasses, sarsaparilla, and allspice, following through to an elegant palate with velvety, chalky tannins.
